Spicy Honey Grilled Chicken

Keep the kitchen cool and fire up the grill with this easy and delicious spicy-sweet chicken recipe.

It’s special enough for a BBQ get together, and easy enough to throw together for a quick weeknight dinner.

Ingredients:

  • 1 teaspoon cumin powder
  • 1 teaspoon hot, smoked paprika
  • 2 teaspoons sea salt (add more to taste)
  • ¼ teaspoon cayenne pepper
  • 4 chicken breasts, rinsed and patted dry
  • 6-8 Tablespoons honey (depending on how much sweetness you want)
  • 2 teaspoons chili powder
  • ½ teaspoon cayenne pepper (in addition to the amount above)
  • 1 Tablespoon fish sauce (optional, but adds a rich umami flavor)
  • ½ teaspoon sea salt
  • 1 Tablespoon apple cider vinegar (increase to 2 Tablespoons if omitting fish sauce)

Directions:

  1. Combine the first four ingredients in a bowl and mix well. Add in chicken breasts and coat thoroughly with spices on all sides. Set aside. Combine honey, chili powder, cayenne pepper, fish sauce, sea salt and apple cider vinegar in a small pan over medium heat. Let mixture come to a simmer than reduce heat to low and cook for 5 minutes, stirring frequently. Set aside to cool.
  2. Preheat grill to 400 degrees and lightly brush rack with oil to prevent sticking. Place chicken on grill and close lid. Cook 6-8 minutes, depending on thickness of breast. Flip it over and brush with honey mixture, then grill for an additional 6-8 minutes. Use a digital thermometer to check the temperature in the thickest part of the breast (avoid any bones). When the temperature hits 155-160 degrees, flip it again and brush the other side with honey. Lower the temperature to 350 degrees, and then cook for a few more minutes. Chicken is done when it registers 165 degrees. Let rest for 5 minutes before serving.
  3. Accompany with a leafy green salad and corn on the cob for a true summer meal hot off the grill!
