While most fruits are available year-round, these fruits are at their peak flavor in spring. This colorful and delicious salad is perfect for a casual brunch or even a light and healthy dessert. The basil adds an unexpected freshness!
Ingredients:
- 2 kiwis
- ½ pineapple
- 1 pint of strawberries
- 1 pink grapefruit
- 1 mango
- 1/4 cup fresh lime juice, along with the zest from 1 lime
- 3 Tablespoons honey
- 1/4 cup finely chopped basil
Directions:
- Peel kiwi and slice into thin rounds, then cut in half.
- Chop pineapple into 1-inch chunks to yield about 2 ½ cups.
- Remove stems from strawberries then cut in half or quarters lengthwise (to make bite-size pieces).
- Remove rind and all pith from grapefruit using a very sharp knife.
- Use the knife to remove each segment from the thin membrane, then cut each piece in half.
- Peel the mango and dice into 1-inch pieces.
- Place all fruit into a large bowl.
- In a small bowl whisk the lime juice, zest, basil, and honey together. Drizzle over the fruit and toss gentle to combine.
