These oatmeal bites are the perfect make-ahead snack to pack for school, work, or wherever your busy day takes you. Eat them as a snack, or pack them as part of a bento-style lunch with fruits and veggies.

- ½ cup old fashioned oats
- ½ cup quick-cooking oats
- ¼ cup almond butter
- ¼ cup honey
- ½ cup dried blueberries
- ⅓ cup chocolate chips (optional)
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla
- Dash of salt
Instructions
- Mix ingredients together in a bowl, stirring until combined. Mixture should be sticky enough to hold together when squeezed. Refrigerate mixture for thirty minutes to set.
- Using a spoon, scoop about a tablespoon of the dough into your hands, rolling into a ball. Repeat with the rest of the mixture.
- Cover and store the oatmeal bites in the refrigerator or air-tight container for up to a week (or freeze to save them longer). Recipe makes about 14 oatmeal bites.
