Spring into action with this mood-boosting, B12-infused dish!
Ingredients:
- 1 cucumber, peeled
- ½ cup sour cream
- 6 oz Greek yogurt
- 2 tsp. dill
- 2 cloves garlic
- ½ tsp. salt
- 2 tbsp. lemon juice
- ½ tsp. pepper
- 8 salmon filets
Directions:
- Preheat oven to 350° F
- Shred cucumber (without seeds), pat with paper towel to discard excess water
- In a small bowl, stir together cucumber, sour cream, yogurt, dill, ½ the garlic, ½ the lemon juice, salt and pepper
- Line a baking sheet with foil. Rinse salmon and pat dry. Place it skin side down on the baking sheet. Sprinkle remaining garlic lemon juice, garlic and salt and pepper
- Bake 10 to 15 minutes, or until center is slightly opaque. Serve with yogurt sauce and enjoy!
